McCarty Farm scones are a hit at farmers' market

The Waseca Farmers Market was alive with activity during the chilly Saturday morning of Sept. 6. Lindsey McCarty of McCarty Farm was operating her booth with the assistance of her sister, Tracy Arola. Lindsey says her biggest seller is homemade scones in various flavors including chocolate chip, pumpkin white chocolate, lemon blueberry, strawberry white chocolate, turtle, chocolate peanut butter and caramel apple.
The baked goods are apparently quite a treat since Tracy admits lightheartedly, “I get paid in scones and apple crisp and that’s fine by me.”
McCarty Farms has had sales tables at the Waseca area farmers market for three years and also sets up at the market in Janesville every other Thursday. Along with that, the farm has a self-serve produce stand at the end of the family’s driveway located at 33430 150th Street, about 3 miles southeast of Waseca. She pointed to an empty part of her selling table and said, “I sold 25 dozen eggs today. We have around 70 chickens laying back at the farm.”
McCarty says the baked goods are from her kitchen, made by her own hands. I have always enjoyed baking throughout my life even as a child, “My mother, who is no longer with us, always enjoyed baking. Some of my recipes are family recipes from her. I've been baking for the same 3 years we've been at the market. I have a Cottage Food License in addition to a MN Certified Food Protection certification. What I didn't learn from my mom I’ve garnered from research such as YouTube, books, etc.”
The produce “is from our garden. We plant and sell green beans, radishes, snap peas, cucumbers, summer squash, pumpkins, winter squash and more throughout the season. In our extra time we enjoy baking - our favorites being our strawberry rhubarb crisp during early spring and our banana breads! We also have elderberry and tomato soups available.” McCarty Farms also sells freeze-dried treats, said Lindsey proudly. The inventory includes freeze-dried bananas, strawberries, peaches, apples, pickles, ranch cucumber and pineapple.
During the winter when she has a little time on her hands, Lindsey says she sews. “I like to sew so I make hot pads, bowl cozies and scrunchies. It’s been a hobby of mine for a long time.” But she wanted to point out what’s different about this winter: “I’m working on a McCarty Farms delivery service and stepping that up when the farmers markets are done this year.”
